Ebelskiver Mini Corn Dogs

Gluten free, Soy free and Dairy free

If you are looking for a healthier baked alternative to corndogs or just a quick and easy way of satisfying your corndog craving without the soy, gluten, and dairy…look no further.  With the help of Bob’s Red Mill Cornbread Mix(made in a facility with tree nuts and soy) and a few added ingredients we have a delicious and simple alternative.

I love corndogs, I am not sure how you could not.  I mean the crispier golden brown outside with a soft, sweeter breading surrounding a mysterious “meat” and deep fried, mmm mmmm that was the good stuff.  Many of us who have multiple food sensitivities also are sensitive to nitrates.  Add that to the list.  Or if you were like me for most of my life, you know hot dogs are a huge trigger for Migraines.  The devastating headache that according to the Migraine Research Foundation.org affects 36 million of us in the US.  That is a load!  Not to mention traditional Corndogs usually include; gluten, soy, msg, dairy, and nitrates and are deep fried in hydrogenated oil, often times in Soy Oil.  So the reality was, it was a thing of the past.

Well I came up with an alternative on Super Bowl Sunday, it kinda just came to me when I woke up and I worked on them all morning.  Now if you don’t have an Ebelskiver pan, you don’t need to buy one.  Yes I promote products I love and tools I use, but I don’t promote products I don’t use often or that I feel could be money better spent.  So if you don’t have an Ebelskiver pan hanging out in the cupboard, you can use a mini muffin pan.  Just cut the hot dogs smaller and bake about 15 minutes.  If you do like I did and refrain from covering the tops of the mini muffins, it is visually more appealing but the hot dog tends to fall out, so either serve with toothpicks pre-inserted or cover those tops.

Cut and heat your hotdogs according to package directions.  I like to thoroughly heat mine in the Ebleskiver pan, so I have less mess and the oil from the hotdogs serves as a substitute  for greasing pans.

Lightly grease your Elbelskiver pan with oil (if you didn’t heat your hotdogs in there) over medium heat and put about a TBSP. of batter into pans.

Quickly place a cut hotdog piece into middle of each pan, on raw batter and lightly press down.

Ingredients:

  • 1/2 package of BRM Cornbread Mix
  • 1 egg
  • 3 TBSP Soyfree Earth Balance or alt. butter (plus extra for greasing mini muffin pans)
  • 3/4 C. Almond Milk
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 3 TBSP. raw sugar
  • high heat oil for lightly greasing pans.
  • about 1/2 package Nitrate free Beef Hotdogs (humanely raised) cut into thirds for Eblelskivers or fourths for mini-muffin pans

Directions:

  1. Mix cornbread according to package directions and add in salt, baking powder and sugar.
  2. Cut and heat your hotdogs according to package directions.  I like to thoroughly heat mine in the Ebleskiver pan, so I have less mess and the oil from the hotdogs serves as a substitute  for greasing pans.
  3. Lightly grease your Elbelskiver pan with oil (if you didn’t heat your hotdogs in there) over medium heat and put about a TBSP. of batter into pans.
  4. Quickly place a cut hotdog piece into middle of each pan on raw batter and lightly press down.  Add just enough batter to cover top of each dog, about another TBSP.
  5. Cook about 2-3 minutes or until first sides lightly browns and flip using your wood tools.  They should move easily.  Cook about another 2 minutes on second half or until done.

For Mini Muffins

  1. Grease your mini muffin tray, add just enough raw batter to cover bottoms of each muffin cup.
  2. Add your hot dog piece and cover with batter.
  3. Bake in a pre-heated oven at 375, on middle rack, for about 14-18 minutes, or until done.
