This is a great Beet Green or Beet Leaf Smoothie Recipe. It is super quick and easy since you just mix it in the blender.
In the summer I crave fresh beets. I don’t know why but I love them and always have. They have an earthy flavor (probably from the dirt) being a root vegetable and all and they are crunchy, a little sweet and quite filling. Beets can come in a few different colors, not just a deep red. I have loved them since I was a kid. I even remember getting picked on because our teacher would ask us in school “What is your favorite vegetable?”, and while most kids said, carrots I said, “beets”. The hubby doesn’t like them which is a surprise since he was a kid who ate dirt. Some kids ate glue or boogers, so I consider myself lucky.
With Beets, I usually like to grill them. They take forever though, I will have to find a less time consuming method. I add a little heat appropriate oil and course salt, grill them and I am a happy girl. I put them on salads or eat them with a vegetable side and that is my vegetarian meal. Now what to do with the leaves? I could learn a new recipe, but I was tired so I decided to save them for later. The leaves become dehydrated quickly so I ended up juicing them the next morning. Cool Beet Smoothie
( A Beet Leaf Smoothie )
Soy free, Dairy Free, Gluten Free
- 1 Cup Water
- 1 serv. Vega Nutritional Shake (“free from dairy, gluten and soy, and contains no added sugar, artificial flavours, colors or sweeteners”)
- 5 large frozen strawberries
- 1 banana
- 1/2 Cup Orange Juice (not from Concentrate)
- About 5 leaves of beet greens
- 1/2 Cup Ice
Put all the ingredients into your blender, in the order given, and blend well.
