Pumpkin…y, creamy goodness in a tall cup. Dairy free, soy free and gluten free pumpkin smoothie. I created this smoothie to appease seasonal cravings for pumpkin. As soon as it starts to cool outside, the gray clouds poke their ever morphing selves out from the once perfect blue skies, and the whisper of crisp cool mornings begin. I crave pumpkin, cinnamon and nutmeg in many forms. With the holidays approaching, heavier eating is inevitable, but that doesn’t mean you can’t have fall pleasures without health in mind. This smoothie has all the yum of pumpkin pie holding the crust and replacing it with a straw, but it is filled with healthy alternatives and full of flavor.
I got the idea from @christinacafe had when she posted delish pics from Nektar Juice Bar. I finally went in and tried their Pumpkin Smoothie late last fall. It was awesome! I loved it so much we went back in and they had their seasonal mint one in and the pumpkin smoothie was gone. I thought I would lose my mind waiting, so I tried many many attempts to get it as close as possible and I think I nailed it. Now finally the reveal of my Pumpkin Smoothie.
- 1 1/2 C. Vanilla Almond Milk
- 2 TBSP. Flax
- 1/3 C. Org. Pumpkin
- 3-5 dates (depending on if your milk is sweetened)
- 1/2 C. Ice
- 1/2 scant tsp. Cinnamon
- 1/16 tsp. (a sprinkle) Nutmeg
Put the ingredients into your blender, in the order given and blend until smooth.
