On the Go Veggie Noodle Soup- soy free, gluten free, dairy free, MSG free and vegan

Do you remember pre-packaged instant noodle soups?  So easy, quick and convenient.  Open the package, add water, wait and eat.  But what if you could do that now?  What if you could do an almost instant soup?  Put a few ingredients in a jar, some spices and take it to work or an outing the next day.  

I often think about where I would be health wise, if I had not discovered my food sensitivities.   This realization is what lead me to a more natural lifestyle.  Am I perfect, not remotely close.  I am learning, and it is a huge process.  Always finding more info, digesting, learning, and hopefully executing.  One step at a time, one meal at a time.  We are forever the students, and at times take on the role of a teacher.   We share with whomever is open to relearning about life, about our food and our bodies.  I share with you, and I hope you share with others as well.  I have innately believed that we are on this earth to make ourselves better, to learn from our mistakes and the mistakes of others, and to just be better versions of ourselves as we grow.  

Although I am not a vegan, my body appreciates taking time off of meat.  I already limit dairy, so having a vegan day or week suits me well.   This is a perfect little break from meat and from a mess in the kitchen.  

  I mentioned in the chicken noodle soup post how a Meal in a cup, was genius.  That sometimes you just want something fast and easy.  Now you can have your soup without the gluten, soy, msg, dairy and other crap you don’t need.  I am so excited for you all to try these quick soups.

This Veggie soup is for people on the go, that want easy access to a quick meal without all the msg, plastic, preservatives, and items that have no nutritional value.  If you don’t have access to a fridge at work you can replace the frozen veggies with a freeze dried vegetable mix.  This is actually even easier to make beforehand and store, and now you won’t have to worry about saving your food, or someone else messing with it.   

 

 

 

Ingredients:

  • 1/2 TBSP. dried minced onion flakes
  • 1  cupe Garden Veggie Bouillon Cube  (Vegan & GF)
  • 1/8 tsp. celery seed
  • 1/4 tsp. dried parsley
  • 1/4 tsp. turmeric
  • 1/4 tsp. garlic powder
  • salt & ground black pepper to taste
  • 1/2 C. Organic frozen Peas, corn, & carrot mix ( or 1/8 c. freeze dried Vegetable mix)
  • GF Dynasty Mai-Fan Rice Stick (aka angel hair pasta) broken in pieces
  • 2 Cups water

 

Directions:  if using frozen veggies 

if using freeze dried skip to step 3.

  1. To a wide mouth mason jar or heat safe bowl with travel lid, add all your ingredients except water and keep refrigerated.
  2. Bring out about 15 minutes before ready
  3. Add  2 cups boiling water stir and make sure noodles are covered completely.
  4. Let container sit, partially covered, for about 10 minutes depending on angel hair noodles. (if using freeze dried vegetable mix, it will take around 15-20 minutes fully covered, to hydrate)
