Oh summer time, the time all the sweet little fresh fruits come into season.  The infusion of ripe red strawberries and lemons make these muffins the perfect summer breakfast treat.  Great little healthy snack on the go as well.

Strawberry Lemonade Muffins

Gluten free, Dairy free, and Soy free Muffin Recipe

Ingredients:

Dry

Wet

  • 3 eggs (room temp so not to solidify coconut oil)
  • 1/4 C. Virgin Coconut oil
  • 1/4 C. Agave nectar
  • 2  TBSP. lemon zest (zest of whole medium lemon)
  • 1  1/2 tsp. Simply Organic Almond Extract
  • 1/3  C. chopped strawberries

Alternative Butter to grease cupcake pan

 

Directions:

1.  Beat eggs, oil, agave, lemon zest and almond extract until well combined and set aside.

2.  Mix dry ingredients and reserve 1-2 TBSP. for coating strawberries.

3.  In separate bowl coat strawberries in gf flour and set aside.

4.  Add all dry ingredients into wet and stir well.  Fold in strawberries carefully.  Use a Tablespoon or large cookie scoop to spoon dough (about 1 heaping TBSP.) into each muffin pan.

5.  Bake in preheated oven at 350 for about  12-16 min.

6.  Let cool 10 min. then remove with a soft spatula.  Makes about 1 dozen.  Make sure to store in a airtight container such as Glasslock Storage Containers and refrigerate any leftovers immediately!
